Veggie Patch Falafel Quinoa Salad

We combine our nutritious falafel with a super grain to make a tasty dish you’ll feel good about eating.
Ingredients:
1 package Veggie Patch Falafel Balls
1 cup each chopped romaine, tomatoes, pickles
1 cup cooked quinoa
1/2 cup freshly squeezed lemon juice
1/4 cup tahini
2 tablespoons olive oil
2 tablespoons fresh parsley, chopped
2 tablespoons chopped kalamata olives
Instructions:
Cook falafel balls according to package directions, then quarter and set aside to cool.
In a mixing bowl, whisk together the lemon juice, olive oil, and tahini. In another large serving bowl, toss the romaine, tomatoes, pickles, parsley, olives, and quinoa with the dressing. Mix in falafel pieces and serve at room temperature.
